I stayed 2 different times at the Ibis hotel which is close to the train station but also right next to the old city center. Very reasonable. It is next to lots of things and is clean. We did do breakfast, extar and it was worth the money. There is lots to do in this nice city and its only a hour train ride from Munich. Have fun!

We stayed at the Romantik Hotel Am Josephsplatz and really liked it. This hotel is in the middle of the old town, about a 10 minute walk from the main train station, about 5 minutes from the main platz, and about 10 minutes from the castle. It is made of 3 historic townhouses and was a really fun place to stay. The owners and employees were very nice and our room was great.

That's Christmas market time, which is high season for Nuremberg for both individual travelers and tour groups.

If you can't find a room and you don't absolutely have to be in the city itself, consider staying in Bamberg or even Regensburg and day tripping to Nuremburg.

My wife and I stayed at the Albrecht Duerer Hotel Garni (http://www.albrecht-duerer-hotel.de/index.htm) in 2002 and found it to be decent. It wasn't anything special, but was adequate for a place to stay for a couple of nights. (It's a "typcial" small German hotel.) They're currently listing rates at EUR 68 for a double. It is located next to the castle, maybe 5-10 mins from the Marktplatz.

Besides all the good recommendations above, I enjoyed staying at Le Meridien just across the street from the train station by the oldtown gate. If you have a problem getting rooms, try using hrs.com.
