In the lower village at Carcassonne there is a pretty little restaurant called Chez Fred that serves somewhat modern takes on local cuisine and that's good value. Also in the lower village is Le Languedoc, for more classic fare.
Up in the medieval city there are mainly tourist traps, but we had a nice lunch one day on the patio of Les Fontaines du Soleil.

In Avignon, I liked Bain Marie, Christian Etienne(sitting on the terrace overlooking the Palace of the Popes)Le cafe des Artistes, Heilly Luccalus, in Nice, La Meranda and in Carcassone, the Hotel du Donjon for fine Languedoc cooking
