NeedValencia restaurant recommendation.
 
We will be in Valencia in February, and I would like to take my wife out for her birthday.

After many attempts, have yet to enjoy a good paella.

Thanks in advance for any suggestions.

Hi, We had a great paella meal at Levante Valencia. It is an Anthony Bourdain recommendation. Very traditional, white tablecloth restaurant. At the advice of our VRBO host, we went for lunch - he told us only tourists have paella for dinner.

We had Valencia de Senyoret - paella with boned chicken and rabbit, roasted artichoke, peppers. It was wonderful! We had read that this was the local variety, not seafood. The restaurant is very old school - lots of locals and what appeared to be regulars.

We also enjoyed a great starter - Esgarrat - roasted peppers with cod and dried salted tuna. And they gave us a gratis dessert - a local drink - rice milk liquor. Very tasty!

I highly recommend this restaurant and their paella!!
