In the last few issues of FRANCE magazine, they have listed all the markets for every town in France, and there are thousands. There is still one more issue containing other parts of France, so I presume those I have not listed will be included in that...
Bayeux - Wed. & Sat., Honfleur - Wed. & Sat. (lovely town!), Dinan - Thurs.,
Markets start in the morning and may continue until late in the day, but many finish by lunchtime, especially in smaller centers. As for Paris, there are many flea markets. I note that in Marseilles there are 23 different market locations, many running 6 days a week - one would think that Paris has as many or more. Of the markets I have visited, they vary considerably, sometimes including mainly fresh farm produce, while at other times including produce, jewellery, clothing and everything else you could imagine.

The country markets move from town to town in a given area. For example each Monday they are in Amboise and on Tuesday they are in another city in the area. They are open mornings only, then they pack up and move to the next town. Check with your hosts and they will be able to tell you where the market is going to be.

The website for paristourist-office.com has a schedule of local flea markets and produce markets by arrondisement: search on the site under "second-hand markets" and under "produce markets". If you're going to be near the 6th arrondisement, there is a wonderful permanent market on the Rue de Buci, and the market on the Rue Mouffetard in the 5th is superb. I believe the French tourist office website also has a schedule of all types of markets broken down by region and town.

There is a book that exists (amazon?) called "Markets of Provence"--excellent
For Christmas I received "Paris in a Basket" by Nicolle Aimee Meyer & Amanda Pilar Smith. I have not used it in Paris yet but the information on the history of the markets have been worth it. In the back of the book is a full index cross referencing the days of the week by neigherborhood by market. I am looking foward to breaking it in.
