Need help with two week itinerary for Crete next spring.

My husband and I are planning a family trip with our adult son and daughter and their significant others next spring. We are all traveling from different parts of the the country and will meet in Athens where we will spend one or two days before flying into Crete.
We are all fit and love to hike, are interested in village life, historical sites and food. We do not like large resorts/hotels and don't necessarily need to spend time on a beach although I know there are some lovely beaches in Crete. We will rent cars and are keen on staying in a villa/ house rather than in a hotel.
At the moment we are contemplating splitting our time between west and east with one week in each. Is it feasible to select one area/ town, city as a base to explore each area?
If this is advisable, where would you suggest would be a good base camp for each week?
