Need Good hotel in Brighton

I will be in Brighton, UK for a long weekend in 2 weeks! Does anyone have a suggestion for a good hotel that I'll still be able to get a room at this late a date? Also could use suggestions for things to do...not the beach bum type!
Also need suggestions for really good restaurants. Thanks for any info.

I'm a couple of years' out o date, but the poshest hotel in Brighton is the Grand. The second poshest is the Metropole. My preference would be the Old Ship

I'd second the Olde Ship. Utterly delightful, lots of history. Let us know how it's held up.

The Grand has a great swimming pool, but make sure you have a seaview room otherwise it really isn't anything special at all.

Brighton has a number of contemporary boutique-style hotels. Try Peliroco or Blanch House, or the best of the bunch (although generally fully booked at weekends) Hotel du Vin.

Hotel Nineteen is where my parents stayed two years ago. They loved it.
