<< People complaining about a cold room or unfriendly staff (especially in Paris) - not something to worry about.>>
?? well, I'd worry if a lot of reviews of a place said the rooms were cold, especially if I were going in Dec/Jan.

Expect supermarkets and a few large stores in Amsterdam to be open on december 26, finding a place where you can eat, of cafes during the day will be hit and miss, but you'll find places.
The 24th is a different affair: shops will close really early. And on the 25th most places will be closed, with restaurants open but usually fully booked for christmas dinner.

I really appreciate the information & advice you all have provided. But sorry to inform that due to some personal matters, we have to change our traveling plan.
Meantime, I will safe keep all the information you have shared with me for next time...
Once again, thank you so much & my sincere apologies for the delayed response.
