A/c is a must if it's hot out, which it is likely to be. Sorry, don't know how else to answer.
What you want is a triple room.
It may have 3 twin beds, it may have one full-size bed plus a twin, it may have one full size bed and a roll-away.
You'll have to ask what the bed configuration will be, it varies.

You might check the Claude Bernard. I haven't stayed there, but based on the good reviews here, and mostly good reviews on Tripadvisor (with one awful one) we decided to give it a try and booked it for next August. They have a great summer promotion for triple rooms that I got by writing them directly (much better than posted on the website), it includes breakfast, the rooms have A/C. We are getting the 5th night free.
We were in Paris during the heat wave in 2003, staying with friends in Paris. I could sleep - eventually - but my poor son just sat on the balcony all night with his head on the table. He was so miserable in that heat. It's A/C for us in Paris this year.
Still deciding on A/C for Salzburg...

Hi averyjade...I wrote to them by email. I have corresponded with Paul (the directeur) quite a few times. I wrote in (fractured) French, but it's my impression that he also speaks English. He answered about 4 emails from me and was so nice about it.

You might also check with the Best Western Hotel Left Bank. Actually it's in the 6th, not quite the Latin Quarter, but just a couple doors from Odeon on St. Germain. Nice and atmospheric hotel WITH AC. They have lots of triples with wonderful baths. The third bed is sort of in its own alcove -- perfect for a child. Should be right about your budget. Sometimes you can get better prices from Best Western, sometimes better direct from the hotel.

I would recommend the Elysa Luxembourg. They have some family rooms and it is ACed. I would recommend air conditioning - it can get hot in Paris in July. The staff there is REALLY friendly and the hotel is nice.
