Ah, well if you have 7 to 10 days to explore Brittany and Normandy the possibilities are endless. I would definitely try to do at least 10 days, and more if possible.

So if you have that much time and it really is a dream then I would stay overnight on the Mont. It's expensive, sure, and the food on the Mont is only average, but not awful like some people say, and not really overpriced compared to similarly touristy locations in Paris. I stayed at the Auberge Saint-Pierre and loved it. You can walk out the back of the hotel onto the ramparts (at any time) and they have a very copious buffet breakfast. If you do this I would advise arriving at the Mont later afternoon or early evening, after the abbey closes and the tourists have gone. You might even dine elsewhere and then head to the Mont and enjoy it at night when it is all lit up. There are lots of little hidden alleys to explore and terraces with lovely views (I never had a spotlight in face). Get up early in the morning for breakfast and visit the abbey as soon as it opens. Then get out of there before the hoards of tourists arrive.

If you want some tips on things to see and do in Normandy and Brittany (and other general advice) have a look at the following two threads:

I wrote a photo report about spending five days exploring eastern Brittany not at all far from MSM, Dinan, Saint-Malo etc. and if you'd like you can look it over for ideas:
