Mosel- konditerei, train stations, seating riverside

Please help narrow my search. I am looking for a quiet relaxing time in the Mosel, in a town with good train access. We will spend about 6 days ideally relaxing, doing some light walking/hiking, and easy biking. I would like a smaller hotel or B and B where we could get fresh broetchen and meat for breakfast. We dont go out at night other than for a bite to eat. I would like very much to be able to sit by the river and just read a book. I am looking to stay in walking distance of a really good Konditerei where I can load up on goodies to take back to the hotel/pension to snack on throughout the day . ( i prefer this to ordering dessert at the restaurants )
Also looking for recommendations for places to eat that might serve me a kinder teller or a smaller entree. It's no good trying to get an extra plate with my husband - he likes his entire dinner !
I am also planning a trip to one of the spas with thermal baths and will take help choosing the best of these. The less time spent traveling from place to place the better.
I am thinking that Cochem is my best bet but do not want to rule out what might be a better option if any of you have better ideas. ( it does seem a little touristy in the videos i've seen )
I lived in Heidelberg for 5 years and traveled quite a bit in germany so i would prefer to be less in tourist mode and more in the mode of " living " in the region ... soaking up all the splendor .
Of course we will take one boat cruise along the river. We reckon it will be a lazy relaxing way to enjoy the scenery.
This trip is planned for June 2017

Bullay is a very quiet little town on the Mosel, 8 minutes upstream from Cochem by train, on the main Koblenz-Trier train line - and also right where the Traben-Trarbach line meets the main line. Day trips just about anywhere are easy. I've spent several days there and found it perfect for quiet countryside walks and biking. Alf is just across the river. There are some small hotels like the Hotel Mosella (which I used and liked very much - nice breakfast in the Gewoelbekeller.) There are also a few B&Bs like this one:

Cochem is lovely but does get a strong influx of visitors during the main tourist season. If you want it quiet try Bullay.

Look into Bad Bertrich for a spa day. Not my thing, I just know it's been there a long time.
