There's a lovely 17th-century townhouse-turned-hotel called the Hôtel de Noailles on a quiet street within easy walking distance of the old town center, where all the shops and cafés and restaurants are (tel.: 67-60-49-80 - to call from USA, add 011-33-4 before that). It's a charming, fairly elegant place, but our room a couple of years ago was under $100 a night - I think well under.
Montpellier is everything that a large university town is - busy, with loads of cafés and restaurants, lots of music and theatre, great bookstores, nice shops....a bustling, sunny city.
I usually just stop for lunch, so I haven't poked around in historical sites or museums - just enjoyed wandering around the old center of the city. I'm sure someone else can fill you in on other attractions.
