March can be dreary across Central Europe. The hiking can be iffy due to trail conditions; and for me the architecture against grey skies seems less appealing. From your list I would go with the Italian sampler; with Rome you'll have a better possibility for nice weather; with Florence, there's always the art; and Venice plays well against possibly brooding skies. Easy to navigate with public transportation; and of course, Italian food and wine.

Not on your list, I spent 12 days this past March between Singapore, Seoul, and Japan (Tokyo/Nagano). Sunshine in Singapore; snow in Seoul; and cherry blossoms and spring in Japan. I had occasion to be in Singapore, and added Seoul and Japan to visit friends. Several years ago we as a family spent 10 days in Japan in March (children's spring break), divided between Tokyo and Kyoto and absolutely loved that holiday.

Good Luck!

<<I was referring to Turkey and Morocco>>

As I already said, both are super-organized and offer ease of travel, booking things, etc. Hardly any different from anywhere popular in Western Europ.

Well, now it looks like I have more options to try and choose from lol. Thanks for the suggestions!

Decide on a tentative itinerary and make new post so folks can dwell on that.

Ahhh! So I booked it, we are going to Turkey! We fly in to Istanbul on Friday March 8th in the morning and fly out the evening of the 17th. Definitely want to go to Cappadocia and Ephesus, I think it will be too cold to go to a beach town.

Ephesus just off the sea - too cold for swimming but staying in a seaside town is always neat. Bring a nice head scarf if going into Mosques.

Turkey can be delightful, and the time you have should be reasonable for Istanbul, Cappadocia, and Ephesus!

IIRC, Ephesus was along the coast when it was founded; it's now about 5 km inland. Many people stay in Kuşadası (near the water), but I was glad to have stayed in Selçuk (near the site). When at Ephesus, don't skip the Terrace Houses!

A good guidebook will prove very useful (I found the Rough Guide particularly helpful) and you might find an idea or two in my old trip report:
