I arrive at Barajas at7:45 am from the US. I have my next flight at 12:10 pm to Paris. Do I have enough time between 7:45 am and 12:10 pm to go through customs, check my bags for my next flight and take a taxi to plaza Major for breakfast? I know I have to be back at the airport at least 1 hour before departure.

This move is related to the day of the week. It will be fine during weekends and a nonsense during weekdays.

I agree w/ car, day of week/time of days makes a BIG difference. But most likely you don't need to retrieve your bags. You can probably check them all the way through to Paris

25 minutes by taxi in a weekend
35 to 70 minutes during weekdays
