The Erostars Grand as mentioned above is in a spectacular location however it is somewhat "removed" from the center of activity although you can walk to the bottom of Las Ramblas from there.
There aer several hotels in Barcelona with pools to include both A/C and Derby Hotels properties as well as the Silken Gran Havana and some of the Apsis properties (although i think the latter may only have indorr pools.
BE AWARE that most hotel pools in Barcelona are NOT big and if you read the various reports on TripAdvisor you'll find that many are descibed as "small" in case that is an issue for you.
The Ritz actually IS very central but IMO it is overpriced for what you get and there are a bunch of hotels close by that offer much better value.

Hotel Claris HAS A POOL.
Also the Hotel Majestic has a roof top pool. The pool at the Majestic is small, but the location of the Majestic is good and if you are looking to just take a "dip" and not an all day "resort/by the pool" activity it should be OK.
There isn't a "scene" by the pool, it is very low key.

The 1898 is an excellent 4-star GL hotel with two pools, both heated year around. One is on the roof and one in the lower spa level. Two of the suites also have their own pools, not as large, but private.
