Luggage locker at Schipol airport and Amsterdam Central Station
 

Has anyone ever used a luggage locker at either of the above locations?
Do they have lockers for larger bags?

yes, yes, yes

in peak times it can be hard to find an empty locker at Amsterdam Centraal Station but there always are lots at Schiphol - in the basement under arrivals hall in main terminal. They have especially large lockers here.

Do they have staffed left luggage counters at the Schipol airport if we want to leave 2-3 large suitcases for 4 days? Or are these lockers the only option and are they safe?

At the airport everytime i've looked there is indeed a staffed counter at the locker room. I believe you may be able to leave things in the lockers for 4 days as well.

As Pal has indicated, there are lockers of various sizes (they are automated) and in the same location is an attended counter where you can also deposit luggage.
