There are boatloads of rental apts in London. Start Googling and you'll be at it for hours, even with a family the size of yours.

Paris is a bit touchier, primarily because of language and a less saturated market. Google Paris rental apartments, look around, and then set up a new post on this board for help in vetting the Paris apts you like.

I am sure your kids will love their holidays in London/Paris. Your daughter will enjoy her shopping sprees in London for sure, especially in Oxford Street, she will be spoilt for choice. A show in London would also be nice, there are even matinees on certain days.

Paris is more expensive than London, especially dining out. But of course you still find the fast food chains, or else you can pop in a supermarket and buy some groceries and prepare some snacks or buy some ready-made frozen meals, if you stay in an apartment.

Maybe you might be interested in taking them to the Asterix theme park, just outside Paris, I think there are even public buses that go there from central Paris. It is a really sweet theme park, and has a French feel about it, your kids will love it for sure, actually we enjoyed it more there than at Disney Resort Paris, although my kids had enjoyed going there as well - they never tire of theme/adventure parks, even now that they are older. But if I had to choose between the two I would choose Asterix theme park for its authenticity.

I think that in your case renting apartments is the best option, although if you search hard enough you might get a good deal out of a hotel. Email them directly and ask them whether they give discounts for families if you book multiple rooms, or even better connecting rooms or large suites. But I guess an apartment might prove to be the cheaper option.

Enjoy your holiday, it is always so nice to travel as a family, as seeing your kids enjoying themselves makes it doubly pleasurable, at least it does for me!!!
