London Gatwick, Stanstead or Luton?
We are traveling from Barcelona to London. and the cheapest route is on easyjet, which airport is the most central to everything in London? We have one day in London and don't want to waste too much time traveling between airport and city

The main question is where are you staying? All three airports have rail service to London, but they go to different stations. So, it depends on which area your hotel is at, and on which subway or train line.

I would double-check the timings. Easyjet, if I recall correctly, gets in very late to Stansted. You'd be on the last train to Liverpool St and not in a hotel till nearly 1 am. I was lucky when I took this flight, managing to get the last or nearly the last of public transport for the evening; but if anything goes wrong....

All three airports have several Easyjet flights per day and all are roughly the same distance in time from London.
All have connections into London at all times of the day & night, so a lot depends on where you are staying as night travel within London is either expensive (taxi) or slow (bus)

Timewise, it's not going to make a huge difference, but for Piccadilly, the quickest and cheapest journey is from Heathrow (direct tube line, 40-50 minutes).
Gatwick would take a bit longer and would be more expensive (train to Victoria, then tube to Green Park or bus)
Stansted would take longest and would be the most expensive (train to Liverpool St, then fiddly tube rides with at least one change)

Ryanair doesn't even fly from BCN. They use Girona (GRO) to STN - 4x daily - and LTN - 1x daily late flight. They also use Rues (REU) to STN - 2x daily.
GRO is about 45 miles as the bird flies from Barcelona. REU is about 55 miles as the bird flies.
