Learning how to make gelato in Italy
 
Does anyone know of any cooking classes or schools that teach the art of making gelato? I did a google search but didn't come up with much.

Isn't it kinda "all in the machine"?

You can take coursework in ice-cream making (and yes, I know there are differences) at Penn State.

AP - The owner of my local gelateria (- who makes the best gelato in Somerset!) told me she did a one-week's course in Rimini to learn her trade.

I'll go and ask her where (- like I need an excuse for another one ;) ) and post back later.

A recent article in the local paper here said that even the best "gelaterie" in town -- there are at least six or seven -- use prepackaged ingredients from Italy for flavours like hazelnut.

Then all you need are the other normal ingredients and a machine.

Steve, that would be wonderful.

Ideally, if I ever did open a gelato shop, I would want to use all fresh ingredients. I'm just in the stage of wanting to learn more at this point!

I have never found a gelato shop in the states that makes the &quot;real thing&quot;...so I bought a gelato machine.

I have good luck making stracciatella...but am still looking for a good fragola or limone recipe.

A tip..if you do make gelato at home and the recipe calls for vanilla beans..use quality soft beans..not the dried out stuff in bottles in supermarkets.

AP - Well - I thought she'd done a course in Rimini, but she tells me it was actually a 'fiera' (exhibition) she went to there. My mistake ...

Apparently this exhibition is an annual get-together of 'gelatai' held in Rimini every January. Eloise has given you next year's details. Here's the website:
