This has been on my list of things to see for ages. I'm planning to go to Paris and Normandy next year (specifically to visit during the 65th anniversary of the landings) and I might be able to extend the trip to mid-June - but that sounds like it may still be too early to swing down to Provence and see Lavender.

This is a great thread though!

I am in Provence at the moment (Avignon), and the lavender is blooming now, even in my motel parking lot. Smells lovely.
