Koln, Rhine River Valley

Using Cologne as a base for the July leg of our travels, we are thinking of spending a day exploring the Rhine River. The plan is to take a train to Koblenz change to another train to Bingen or Rudensheim, take a KD cruse (possible hop on -hop off to explore a couple towns along the way, end in Koblenz and then train back up to Cologne. Is this realistic to do in a day? Any suggestions are welcome as well as suggestions as to how we can make this cost effective.

Take the train to Rüdesheim and explore the cute town. Ride the cable car above the wineyards up to the monument. Then board the boat at 14:15. Leave the boat in Oberwesel at 15:35 and explore the historic town. Board the next boat at 17:35 and arrive at Koblenz at 20:10 and take the train back to Cologne.
