I dont know of any first hand but did a search on bn.com and found 'Jewish Time-Travel: A Travel Narrative and Guide to Jewish Historic Sites in Europe and Israel' by Mae E. Sander. It included Spain, Italy, France and Israel.
This isn't exactly what you're looking for but it's still a great book: "Europe's Jewish Quarters" by Matthew Reisz

The chapters are about the Jewish Quarters in various European cities and, as I recall, there's one on Toledo, and perhaps one other city in Spain. Reisz does go into a fair amount of history in each chapter.

laurai,
This isn't a tourist guide book, but it is a truly wonderful book first recommended by John S. here on the forum-"The Mezuzah in the Madonna's Foot-Marranos and Other Secret Jews" by Trudi Alexy.
It's a fascinating read of first hand accounts of survivors who found aslylum during WWII in Spain- the "secret" Jews of the Franco regime. I was so glad that John shared it with us.
