There are 3 ways of looking at things... Dash round and decide where you would like to spend more time next time.. pick a couple of key touring base bases and explore an area in more depth. Finally just set a relaxed pace and see what can be comfortably taken in without overdoing it..

Leaving tomorrow!! Very excited! Where would you recommend us to eat lunch after landing into shannon (noon), on our way to kenmare? Would Limerick or Adare be a good place? If so, which pub or restaurant would you recommend for lunch? Thank you!

Auntie Lena's in Adare might work, You don't actually touch Limerick any more with the Shannon Tunnel. (unless you want to?)

We'll take the shortest way to get to Kenmare from Shannon Aiport ,N18-M20-N21-N23-N71. But we'll need to stop somewhere for lunch , max 1 hour away from Shannon Aiport. Where would you recommend?
