Italy with almost 12 yr. old granddaughter

Ideas please for a special trip! She is clear that she would like to visit Venice and Pompeii--we've taken 4 trips to different areas in Italy and relished it all. Her background is animal agriculture, she loves to read and cook, loves fashion--is preteen without the diva part, has a good logical mind and enjoys an adventure! The history and culture are important, but we'd also like activities that are countryside and people related. She will help plan when we've focused an itinerary. We will rent a car and use public transportation where possible. We've been promising to take her for several years, and her parents finally agreed to it for June.
