Prosciutto and caprese salad (fresh mozzarella, super tasty tomatoes, and fresh basil) are two Italian treats you should be able to enjoy. Ohhh...and the cheeses! There'll be plenty to indulge in, don't you worry! :)

Wow! Thank you all for the great information and helpful tips. My doctor and nutritionist have worked out a daily eating plan that is working so far. I have had to tweek it a bit here and there but now that I am getting used to these dietary changes I can see where this plan will be do-able in Italy. NYCFood Snob is correct that it will take discipline, but with all the hints about eating fresh fish, vegies and the fruit (within reason), I feel much more confident about staying healthy and not getting sick while in Italy. I have been doing some research about the areas we will be staying in and we will definitely take advantage of the open air markets while walking through the various cities and towns. My husband is a huge foodie and when he found out about my health issues of course he was concerned but his main reason for going to Italy is to eat. So I told him he can still eat but he is just going to have to get used to the fact that while he is eating a third gelato I will be enjoying a pellegrino and people watching or touring a museum, which actually is very appealing to me!! It is very comforting to hear from others that have this problem and have managed to control their blood sugars while traveling.
