Along with Christina, I like the idea of Barcelona. It is a very youthful-seeming city, with fabulous food and plenty to see.
We have been to Rome the first week in December and had shirt-sleeve weather, though we has thunderstorms as well. There are few cities with as much to do as Rome, and the food can be brilliant.
Aix-en-Provence was crisp in December, but outdoor cafes were fine for lunch, and many of them had heaters for evening. There is a Christmas fair with lots of santons, and it is packed with young people because of the university.

Thank you all for the great information! I appreciate those who gave helpful suggestions. All the links are great and if you think of any other options send them on. Now we're even thinking Hawaii! Who knows where we'll end up!
Just to clear things up about the young adults and them wanting to do something fun. I meant that they probably wouldn't want to spend as much time doing museums, cultural things and relaxing as us and might want to go out exploring on their own.
