I don't think any other country cares about your residency in Canada...it's not a passport or a visa and is only valid in Canada as far as I know.
Our South African friend has a UK indefinite leave to remain (permanent residency) and he still has to apply weeks in advance for schengen. They don't care about his uk residency at all...

As I said before the issue might be that you'll transferring to another Schengen flight. AF & KLM are one company. If this visa thing such a big issue may they'll be willing to exchange portion of your ticket (YUL-CDG-AMS) for the direct YUL-AMS flight (there is one daily) with KLM. In AMS (Schiphol) there is no need for visa as long as next flight is non-Schengen.

From what I can see, the problems is what PP said...transferring to another flight in the zone.

Can anyone comment on this : http://www.consulfrance-toronto.org/spip.php?article545
Consulate General of France in Toronto site says: "The visa section of the Consulate General of France in Toronto reminds all Landed immigrants of Canada, holding a valid Permanent Resident Card that they do not require a visa for an Airport Transit in the Schengen Zone."

They're referring to an international to international transit, i.e. YUL-CDG-JNB.
The link that danon posted above explains it better:
If you are holding a valid Permanent Resident Card of Canada, or a valid Green Card of the USA AND you are not going out of the international zone of the airport AND you are holding confirmed airplane tickets (NO « stand-by ») AND your next destination after France is not a Schengen country, then, no matter what your nationality is, you do not need a Type A visa. You can transit without a visa.
If you're still ticketed as YUL-CDG-AMS-JNB, what you need is a short stay visa not a Type A transit visa.

Thank you for all the replies. I appreciate your input. After several days of trying to contact the airline (and several hours of being on hold), I was finally able to change my ticket. Praise God!
