Ireland Tourist Information Centres

My husband and I will be in Ireland from the middle of June until the first week of July. We will be spending our first few days in Dublin and have our accommodation booked. We know that when we leave Dublin we will be heading south (we have a car). When we were in Scotland a few years ago we did not have prearranged accommodation but rather we would go to the local tourist information office's in the towns or villages that we stopped at for the night and would be able to secure accommodation through them. Does any one know if Ireland offers the same service, or should we book places in advance. We prefer not to be committed to a destination in advance as it takes away from any little "gems" we may discover along the way.
