If you have more than 1-2 days I would not stay in Interlaken itself unless you are really into nightlife or shopping. I stayed there last August, and I will stay more into the mountains next time. Either Wengen, Lauterbrunnen, or Grindelwald would be excellent. Murren and Gimmelwald are both terrific, but may create more transportation problems than the others. You can do the Jungfrau trip (the best $150 I ever spent) in half a day if you go early. I would go as early as possible to avoid some of the crowds and to have a better chance at clear weather. When I was there it was spectacularly clear for the Jungfrau, but each afternoon it clouded up and rained. Another must is the Mannlichen to Kleine Scheidegg walk (supposed to be the most beautiful in the area). It takes about an hour and provides gorgeous views of the Eiger, Monch, and Jungfrau. To get there take the long cable car up from Grindelwald. Lauterbrunnen Valley is lovely and makes a good long flat walk. Save this for cloudy weather and do higher walks when clear. It was quite hot when I walked the valley. Grab a bite in Lauterbrunnen and picnic along the way. Then you may want to take the cable car up to Gimmelwald and Grindelwald. You can find good info on Gimmelwald in Rick Steves' books. You may want a Swiss Pass for the trains if you plan to ride a lot, and we did.
