Incredible food/restaurant expriences in Sicily?

While I'm sure it's all incredible, does anyone have a recommendation on a place that was a stand out experience for a fellow foodie? And/or in an unusual, very cool or different place?

If you're up for organ meats, you should try the vastedda (a sort of spleen sandwich) at the Antica Focacceria San Francesco in Palermo.

Will be in the Selinunte/Menfi area on the west coast. If so, we know a great seafood place on the coast--I would have to check my notes.

I think, at this point, what would really be incredible is if you told us where you are going to be--on a day trip, over night etc. rent a car, go alone, feel unsafe. If you can tell us have you have solved all your problems--travel person cancelled etc. We can be more helpful. I think you have lost several of us who were initially wanting to be helpful. As for me, I don't know how to do that at this point.
