I'd go the ATM route for cash as well rather than taking a lot of euro with you. We withdraw cash every few days as needed. Works well. We like to pay for most of our expenses in cash rather than with cards - just more straightforward that way. No worries about if and what cards a place takes, chip and pin vs. magnetic strip, and dynamic currency conversion.
