In terms of reservationsand depending on where you eat...I've never made any. Mind you, I'm usually travelling solo. I have on occasion stopped at a retaurant as I am going by during the day to make a reservation, since I'm there.

I usually go at the beginning of service (~8PM), so I'm there near opening. I'm also usually flexible in that I have a list of restos in an area that I can choose from. I can't remember ever being turned away.

I know some people here want to make reservations before going, or be made by hotel when they get there. One reason may be people want to have the plan "in action" before the meals.

I'd still be interested in other's experience on whether that is required for "regular" restos, versus the mandatory ones like Jules Vernes, Tour D'Argent,etc..

Some of the restaurants we plan to eat at will require a reservation a few weeks in advance like Chez Denise, Les Ombres, and Chez l'Ami Jean.

We've stayed in 2* hotels and even B&B's where the owner or staff people were happy to make reservations for us, as well as recommendations for great places to visit or eat. I don't think there has to be a concierge for those services but some places are more willing to do that sort of thing than others. That's what I'm asking about Andrea de Rivoli. Another hotel we're considering, in a similar area is Hotel Joan d'arc, also a 2 star, a few euro more than the Rivoli, but I'm told the staff is extremely friendly and more than willing to help with reservations and what not.

If it is a place that you really want to go to, yes.

If you just want dinner somewhere, no.
