Oh, we aren't planning on going to Madam Tussauds. I was there many years ago and while it was fun in my 20's really don't want to spend the over priced admission along with the long waits. We also have one in NYC if we wanted to go

I am so glad I saw your thread as we are planning a similar trip, but in August. I didn't know that the Eusrostar to Paris was doable in one day. We have been several times to Paris, but without the kids. Maybe is worth it for them to see at least one day!

St. Martin's has a brass rubbing centre in the lower level that is popular with families. There's also a nice cafeteria there which makes for a good lunch break.
I'd consider a visit to the Borough Market (food) on Saturday after the Tower. It's not very far (on the south bank) and your family would probably enjoy browsing around and choosing some of the wonderful food for lunch. I'd imagine your husband would find this particularly enjoyable. There are shops on the edge of the market, such as Neal's Yard Dairy which sells artisan cheeses. http://www.boroughmarket.org.uk/ It's also open on Thursdays, so could be something to do your first day.
We did the Eye on the first day of our first visit last March, combined with walking around Westminster area. That was a sunny Saturday, and the sidewalk performers were out in full force around the Eye and it was quite the festive atmosphere.

Re. boat to Greenwich. I tend to take the DLR to Greenwich and the boat back up to Westminster. Whenever I've tried to do it in reverse I've found that the boat ticket booths will only sell return tickets, whereas you can buy oneway tickets from Greenwich.
If you use a travelcard or oyster to get to greenwich you can get a discount on boat fares, just show it when you pay.

That seems odd - I don't think I've ever done it round trip - maybe once years ago. Was it at one particualr pier where you couldn't get return tix? Maybe Westminster does and Tower doesn't or something??
Even back when DLR didn't go to Greenwich I'd walk under the river through the tunnel and take the train back
