How busy are the Rhine & Mosel River Valleys in early May?

We need some help planning. My husband and I want to leisurely explore parts of Germany's Rhine and Mosel River Valleys for about a week starting May 2nd. We will be coming from Antwerp, so can travel by train to Koblenz. From there, any combination of train, boat or rental car travel seems possible. Would love to spend 3-4 nights in Cochem on the Mosel.and need a car for Burg Eltz, at least. . Also want to cruise a good section of the Rhine. We are flying out of Frankfurt at the end of the week.

So my question is, during the first week of May, will it be too busy to go without reservations for the Rhine part of our week, and find something for a couple of nights? Also, since we don't know exactly how long we will need the car, is it a possibility one might be available without a reservation?

If not, we need to know where to to go first! Maybe ......after arriving in Koblenz, cruise down the Rhine, stay in Bacharach or????, circle back to Koblenz, rent a car, visit the Mosel Valley, return the car to Koblenz and take the train into the Frankfurt airport--...that's the plan so far....all thoughts are welcome!
