What is the minimum hotel star quality I should be considering? Three star? Four star hotel? Has anyone ever stayed at any of the Thistle hotels?

I think it would have to depend on your budget. I would go for the best that I could afford. Even though you don't spend all that much time in your room, I think a nice hotel is always worth it, espesially with a view.

I agree that the best you can afford is a good measure. I know a lot of folks will tell you the hotel room isn't all that important because you "don't spend much time there" although I dare say that if you sleep five or six hours and take time to shower/bathe every day that it will average out to 8 hours which is fully one third of your day (hardly "not much time").
You might check into what the rating system really means...since it is usually based on amenities offered such as a pool, newsstand, etc., rather than strictly on comfort or location.
You might also consider booking through a discounter although be aware that generally those rooms are the "standard" ones. Good luck.

Thistle hotes are fine - some are better than others - e.g. Royal Horseguards has large rooms, some have views of the Thames.

Narrow it down to a few, then look for more customer comments here at fodors, and at tripadvisor.com

The stars are gov't ratings and have to do with measurable criteria like lobby size, number of rooms with private bath, elevator or none, etc. Stars don't necessarily speak to location, decor, general ambiance, or even necessarily daily cleanliness, though that should be a given.

In many cases, the best room in a two-star hotel could be better than the worst room in a three star, and that works at all levels. It's best to go with a recommendation from some source.
