Hotel in Old Town Dubrovnik & Spa in countryside

I have been looking through posts here and maybe I didn't get far enough back but I cannot find the information I need. Any suggestions would be much appreciated.
1. I need to find a nice, stylish hotel with character in the Old Town section of Dubrovnik. It is important that it is right in the center and that you can walk everywhere. Sopas would not work since there are several of us and we need 4 or 5 maybe 6 rooms in one location and probably we need hotel services, as well.
2. After Dubrovnik, we would like to get away for 4-5 days. For the get-away we are looking for a spa-resort style hotel in the coutryside (sea coast, an island?) not more than 3 hours away from Dubrovnik with great scenery, outdoor adventure opportunities (sea kayaking? hiking?) and ideally some historical points of interest. It may be an unusual request, but that's why I am posting it here. I checked the guide books already. Thank you so much! Yolanta
