If you're looking for a youth hostel, check the french federation of youth hostels site : http://www.fuaj.org/
There's an english version. Just click on Nice on the map, there's one.

There might be also private youth hostels, but I wouldn't know how to search for them.

Generally speaking, you'll find more informations about youth hostels on message boards that cater more for a public of young backpackers, like the lonely planet site or www.eurotrip.com

YOu can find very good listings of French hostels on www.gaf.tm.fr They have a special section on youth hostels and you can search by region and city. There is a real nice one in some old villa near Nice. I think it's in Cagnes-sur-Mer.

I am not sure where in France you are wanting a hostel, but I stayed at the Young and Happy hostel in Paris and had a great experience--clean, friendly staff, great location. www.youngandhappy.fr

Try www.bugeurope.com - they have reviews on the hostels that they list. Anything saying they're near the train station is a pretty good location.
I haven't stayed in any of them yet, but I did stay in Hotel Trocadero - quite inexpensive for a hotel and pretty decent price. Really good location.

Most hostels allow people of all ages.

BugEurope.com and hostelz.com (these sites particularly for the reviews) and Ryanairhostels.com all have good listings.

I'd also suggest posting on the following forums:
