You really need to provide a specific amount in euros per night. And tell us what you expect for that amount.
For a honeymoon in those ciites - s semi-special hotel - I would allow about 400 euros per night - although the best hotels can cost twice that.
But you need to tell us what YOUR budget is.

Nice hotel to me means nice rooms and nice location as well. I never slept in Venice and I was in Paris too long ago, but as for Rome I would stay at Borromeo Hotel in via Cavour which is the street leading from Termini station (you can walk) to the Colosseum. Then the street is full of shops café and restaurants, so you can get out at night without having to go too far from the hotel.

Not sure what you mean by "nice," but here are some really "nice" ones.
Rome - St. Regis, Westin Excelsior, Hassler, Eden, Majestic
I've stayed at the Westin Excelsior and Majestic, and of those 2 preferred the Excelsior. Both are on the Via Veneto.
Venice - Cipriani, Danieli, Gritti Palace, Westin Europa & Regina, Bauer, Luna Baglioni
I've stayed at the Danieli, Europa & Regina and Luna Baglioni. They were all fairly similar in luxury, but the Luna is a bit smaller. They are all close to Piazza San Marco. The Danieli has a rooftop restaurant, but the Gritti has a bar on the Grand Canal as does the Europa & Regina.
