We stayed at the Wolf Dietrich a couple of years ago. We stayed in the 'annex' across the street at a lower rate. There is no elevator in that building, but our room was comfortable and very quiet. My only (minor) complaint was that smoking was allowed in that building. We could smell the smoke in the hallways and stairwell but not in the room.
The hotel is on the opposite side of the river from the majority of tourist sights, but it wasn't too far for us. We enjoyed crossing the river and seeing the town from different perspectives. But, with only one night there, you'll have to be organized in your plans.

We stayed at Hotel Weiss Taube, I believe rates a little lower that Dietrich, loved the location and enjoyed our stay...will be returning to the same hotel in 2014.

Just returned from a stay at the Hotel Elefant; very nice place, good breakfast, courteous staff, perfectly located in the Old Town.
It's easy to get from the train station to the old town, many buses that leaves the station go there. If you get off at the 1st stop over the river, Hotel Elefant is steps away.
