Too bad you can't fly back direct from Catania (with a plane change in MXP or FCO). That's what I would do. Otherwise, I would take the Intercity (IC) train from Taormina to Naples, and spend the last night in Naples. The trip is not that long (about six hours), not particularly boring, nor that expensive, and you can check schedules and fares on www.trenitalia.com Flying from Catania to Naples is expensive and not worthwhile, in my opinion. Plus, you have to get down to Catania by bus, taxi or rental car. I'm not aware of any ferry service from Catania (or Taormina, for that matter) to Naples.
