Help, please, with my Lisbon and (mostly) southern Spain itinerary

I'm in the initial stages of planning our itinerary for Lisbon and southern Spain in early April 2016. We've purchased nonrefundable tickets to fly into Lisbon (from Los Angeles) and out of Madrid. We have 20 days on the ground. When I bought the tickets it seemed like we would have plenty of time, but the more I read, the more I want to see.

We're interested in great food, architecture, significant sights, just a few museums and soaking up the feel of each city, meaning we're happy to spend a lot of time wandering and sitting in cafes. We want to travel at a relaxing pace but I'm afraid we'll need a vacation from our vacation when we get home due to the several two-nighters starting on day 12. Please critique what I have so far. Is there anything you would cut? Where would you add those days? Should I cut the nights in Cordoba, add one more to Seville and ??, and make Cordoba a day trip?

Day 1: Lisbon (flight arrives at 8:50 a.m)
Day 2: Lisbon
Day 3: Lisbon
Day 4: Lisbon
Day 5: fly to Seville
Day 6: Seville
Day 7: Seville
Day 8: Seville
Day 9: pick up car and drive to sherry triangle. Can't decide where to stay: Cadiz, Sanlucar, Arcos de la Frontera, or??? We want to visit a sherry bodega, eat seafood on the Costa de la Luz, see the white hill towns, see some flamenco and catch an equestrian show.
Day 10: sherry triangle
Day 11: sherry triangle
Day 12: drive to Malaga city via Ronda
Day 13: Malaga city
Day 14: Drive to Granada. Drop car
Day 15: Granada
Day 16: Train to Cordoba
Day 17: Cordoba
Day 18: train to Toledo
Day 19: Toledo
Day 20: train to Madrid
Day 21: fly home

Another option that would split up the 2 nighters would be to fly from Lisbon to Madrid and train to Toledo for 2 nights, Cordoba for 2 nights, Seville for 4 nights, 3 nights for costa de luz/hill towns, 2 nights Malaga, 2 nights Granada, and train to Madrid the day before our flight home.
