green landscapes during the winter
 
Hi,
I'm looking for a nature trip (hiking) during the winter (from January and on), where the landscapes are still green.
This year I spent January on some of the Spanish coastal parts of the Camino, and it was all green.

What other places in Europe would have green landscapes during the winter?

Do you consider late March & early April winter. If so - this is what the Val d'Orcia in Tuscany looks like with the winter wheat covering the rolling hills like green velvet - with cypress tress & a perched village here & there.

In rural central Italy, the fields are very green in January, mostly because of the winter wheat crop.

Where I live, the winter wheat has been up for almost a month, and it will be green until late spring.

It's very green here still in the Périgord, but it's been a weird season so far. It was almost 75 F here today. The farmers are still harvesting second crops.

A great place for hiking and green too is La Palma in the Canaries. A fantastic network of footpaths, and buses. La Gomera and El Hierro are also possibilities. January/February is a good time to go as it is good walking weather, warm but not too warm. The Almonds may be in blossom too.

Cornwall [and indeed most of the UK] is green in the winter; generally the further west and south you come the warmer it is, so if you want British sunshine in the winter, come to Cornwall.

Is Lizard the best place for hiking in Cornwall?

I've been to Italy this year and would rather not go back so soon, I appreciate that recommendation!
Val d'Orcia indeed looks amazing!

the Lizard is indeed a good place for hiking [as is all of the SW coast path] but you do need to watch the weather forecast as it can be dangerous if very high winds are forecast. Usually you can reckon on one or other coast being better than the other depending on the wind direction.

There are also inland walks if coastal conditions are too bad.

Whatever you choose you should be well equipped for hiking with proper boots, map and compass, food, water, suitable clothing etc. And Tide tables if you intend to go near the coast.

BTW the sun may shine but it won't be hot!
