I'll make the assumption that you're more interested in seeing the major sights than doing the beaches and nightlife thing. If so I'd probably flip the itinerary. Do the driving portion first, while your fresh and rested and the islands last.
Driving in Greece is easy but tiring. Once you get off the national roads, for example into the villages near Stemnitsa, your driving time will increase greatly. I'd probably go Athens-Naphlio-Olympia-over the new bridge-Delphi-Meteora-Athens. I've never been to northern Greece so I can't comment on that. Long way to drive though.
The island portion may be a bit hectic, but you can always drop some off if your tired and weary.
You probably don't need hotel reservations unless you have a specific place in mind. You can use a credit card for the car rentals and probably most of the hotels, unless you're going to very small out of the way places. Then cash would be the norm. Atms for spending money.
If your comfortable with e-bay you can usually purchase euros from people who came back with extra. Usually at exchange rate + small shipping fee.

I wouldn't find a different bank. You're visiting every year, open a small bank account. We have an Alpha account. It doesn't save you any money on the transactions but it gives peace of mind, some money is always there.

Thanks for the advice. I think we'll plan on cutting back on the itinerary to work in some R&R on the islands and definitely take a look at reversing the trip to do the islands last. It seems to make sense. This forum is absolutely invaluable for gathering lots of good info. Thanks to all who responded.
