Greece trip-Istanbul to Crete-good idea?

My husband and I have never traveled outside of the U.S., but this fall we would like to take our 10-year-old and 7-year-old to Greece to see the historical sights we have been reading about. I'm intrigued with the idea of flying into Istanbul (also a great historical stop), driving through Greece and flying out of Crete, where we could visit the Knossos site. Is this a good plan? Is renting a car the best idea? Is Istanbul safe for American tourists in the current political climate? Since this might be our only trip to Greece, ever, what should be sure to not miss?

Any advice would be greatly appreciated.

you may want to fly from Istanbul to Athens. And you certainly should fly to/from Crete where it is now 19 Euros(plus a fuel surcharge) per person each way. You can rent a car for Crete. You can arrange tours from Athens. There are also great tour guides for Istanbul.
