Hi! I must say I really appreciate all of you taking out so much time to explain things to me, thank you.
I am going to try the train, so in Frankfurt Airport I will try to find a ticket counter with humans (I thought maybe the machines might not be in english or accept my U.S Visa credit card?).
Also thought to take a 6 PM train to Frankfurt and get a hotel there on the 22 since my flight is at 8 AM on the 23rd. I thought maybe in a small town it would be hard to get to the train station at 4-5 AM or so, and be at the airport by 6AM, correct? I also have to pick up some baggage that will be stored at Frankfurt.
Okay that is my thinking so far, does it sound about right?

The ticket machines are in 6 languages and take any credit card - there is nothing special with an US credit card (unless it is some exotic brand like Diners Club).

If you arrive in Terminal 1, it is very easy to find the train station. The escalators going to it are next to Arrival Hall B, which is also where the luggage storage is, as well as the Marche' cafe, and the only Meeting Point in Terminal 1. You just need to follow the signs that say "trains" or Regional train station.
I think in your case, it is easier to use the services of the DB people to get your ticket to St.Goar. It is only an extra 2 euro and they can be very helpful.
Staying in Frankfurt before your flight out is a good idea too. The S-bahns start running around 04:15 in the morning, or you could take a taxi.
