A highlight of our trip to Germany was the time spent in the Mosel Valley. Yes, go to Burg Eltz and continue down the Mosel all the way to Trier with it Roman ruins.

Bamberg, mentioned by others above, is an absolute gem of a town. We spent 3 nights there in June and it was one of the highlights of our trip. We were in Germany for Spargel season--didn't realize that asparagus was that big a deal in Germany, but I sure learned a lot about it while we were there. Second suggestions concerning the Mosel River including Burg Eltz--we stayed in the tiny village of Beilstein for 3 nights, and our time there was another highlight.
