Leave the backpack in your hotel and carry a daypack with things of little value: water, maps, umbrella, guidebook.
I had my shoulder bag unzipped several times in the Paris Metro until I took to carrying it in front with my arms crossed over it. Only lost a gastronomic guide that was in an outside pocket.
