You really cannot go too wrong; inasmuchas, the area you will be touring is so close. I would go for Menton, which is a seaside town, and from there you can explore. We stayed at both the Hotel Riva and the Princess Richmond (next door).

If you want to go to Eze, we have stayed at L'Hermitage col d'Eze.

Hope this helps.

We go to Nice quite often, and absolutely love it, but if I had to choose from among the 3 towns you've mentioned, I'd go with St. Jean Cap de Ferrat.

St. Jean has a very picturesque harbour area full of galleries, shops, and excellent seafood restaurants. It also has a lovely seaside promenade that takes you right past the famous villas built in the area. And, it's home to Villa Rothschild, which you say you'd like to see.

As for the other choices, we stayed in Beaulieu several years ago at one of the fanciest hotels,( LE METROPOLE) and really didn't like the stuffy atmosphere. Also found the town very very quiet at night.

Eze is beautiful, but rather remote, and totally in the opposite direction of Antibes and St. Paul, both of which you'd like to visit.

Ditto for St-Jean-Cap-Ferrat. Menton is quite far to the east, and Eze is indeed remote for visiting the places you want to go.

In Saint Jean Cap Ferrat I would recommend the Clair Logis hotel (romantic, quiet and has a magnific park).

In Saint Paul de Vence I would recommend La Grande Bastide (v. good view of the town and a pool).

Both are very good hotels with good value.
