I just have to agree with the Belgian fans...in fact, the fries you can buy at the little green carts in front of the bell tower on Gros Markt, with a variety of sauce dips, are certainly among the best. Yes, better and more memorable than the frites we've sampled all over France for many decades.

HOWEVER, if and when you ever get to L.A. the #1 fries are indeed "yam fries" at a hamburger bar on Montana Avenue..."My Father's Office"...both the burger on French roll,with carmelized onions and the accompanying "yam fries" are unsurpassed by any other rendition(IMO).

Like I've told others on this forum, please come to L.A...but don't move here.

And the best thing about Belgian frites is you get to eat them with....mayonnaise....heaven!

Thanks, Pvoyageuse. I suspected as much. Perhaps they are coming into greater popularity again in nicer places to set them a "step above" the simple stands, brasseries, and fast food joints that serve the regular style pommes frites? It just seems that 15 or 20 years ago, I never saw those wide "steak fries" or Pont Neuf potatoes in Paris. Now I see them quite a bit.

Pommes Pont Neuf are as old as ........ Pont Neuf which was built between 1578 and 1607.

I doubt it. Parmentier is the one who finally convinced the French that potatoes were not poisonous, and that was in the 18th century.

added "almost". "they are almost as old as Pont Neuf". I was having fun writing about their being ALMOST as old as something new (neuf).

If they were indeed the first thick fries to be sold in the area as the story goes, I didn't give a precise date

Robespierre : indeed, it may well be a question of culinary fashion but they are pretty traditional.

I stopped eating mayonnaise the day after I learnt how to make it myself.

It is oil with a touch of egg yolk and mustard, but oil.

5 foot 10 and 155 pounds. How fat are you?

Hopscotch I am with you. Was recently in Amsterdam and the fries were incredible. I had a plate of them with mayo and a "white" beer in a cafe and thought I was in heaven.

Mustard, my friends, mustard.

Mayo -> bad. Mustard -> good.

Nothing like a great way to clear sinuses! I wish they served the same mustard with fries in US.... I have a bottle in the fridge, but never the fries at the right temp/crispiness to enjoy it with.

Pommes Frites are NOT a French dish but a Belgian Dish. In the 17th century, in the area of Namur, Huy and Dinant, people used to deep-fry fish. When they could not get fish because the rivers were frozen they used to cut potatoes in fish-form and deep-fry them.

Hence, you still find the best pommes frites in Belgium. The very best you get a streetstands, but even good restaurants serve them as a side dish.

This would never happen in Paris. Steak frites is a kind of fast food, served in bistrots not in proper restaurants. If a restaurant serves pommes frites as a side dish avoid it - it is a tourist trap.

IF you want to enjoy pommes frites in Paris go to a street stand or into one of the tiny, somewhat dingy Arabian fast-food places. My personal recommendation is frites merguez:

You get a baguette (!), stuffed with frites and merguez (spicy lamb sausages). You help yourself with hot sauce.

You find most of such places in Quartier Latin.

Mayo, though the seeming favorite topping for frites in Belgium and Holland is not the only concoction you can chose from

There is also some kind of Pinda??? or sweet peanut sauce

and curry sauce

and then there's the ultimate Frites Speciaal - mayo, ketsup, onions, relish, etc. all on one pile.

Our local friterie in Brussels has at least 10 sauces available in addition to plain mayonnaise. Our favorite Brussels non-friterie frites come from the Canterbury restaurant by the Ixelles lakes/ponds.

In Paris, we used to get fantastic frites at the Rose de Tunis close to the St. Michel fountain. Twice cooked, of course. Alas, the Rose has been uprooted and replaced by a shop of some kind. We haven't found anyplace else in Paris serving frites as good as theirs were.
