I wouldn't base in Sarlat to do hikes in the late fall/winter/early spring. There's too much junky scenery you'd have to get through before you got to the pretty parts and it's hilly on the one side where the parts aren't junky. Maybe Le Bugue.

StCirq, just to clarify... my suggestion for Sarlat was because of its central location and level of activity/accommodation options in the off-season. I agree that for hiking, at least from our experience last summer, that it's not a good location to hike out of. But if you had a car, you could drive 15-30 minutes and there would be many options for circular walks in the area.
