I like both Aix and Avignon, but agree Aix isn't that central for people who want to visit the Luberon, Avignon, etc. Various places one could base, it isn't clear if the OP will have a car, though. I would NOT base in tourist site Les Baux, that's for sure for many reasons.

But I would have suggested Lyon or Dijon as a place to visit for a couple days on the way from Provence to Paris rather than the Loire. Both are more on the way and easy by TGV. In fact, the TGV goes to Lyon first, and then you have to change to get to Dijon, but those traveling times aren't long, only about 4 hours total to get to Dijon. I don't think you can even go to the Loire from Provence without having to change trains in Paris, I would never do that myself.

There are several direct trains Lyon to St-Pierre-des-Corps (Tours) - most are IC trains taking 5.5 hours but one TGV goes direct via Paris-Massy to SPC in under 3 hours.
